Gabriel Vidal 70e7065e62 fix(sidecar): install.sh picks the first .env that actually holds SIDECAR_TOKEN ...

The repo's own .env now exists for other settings; grepping it for a token it
doesn't have killed the script silently under pipefail, so a reinstall never
reached the homelab .env.
