Gabriel Vidal d31b1bf276 feat(ai-agent): scope mounts to .claude/ + projects/, add transcripts & DB ...

- Replace the whole-repo bind mount with just .claude/ and projects/, so the
  app only sees the Claude context it edits.
- Mount ~/.claude/projects read-only at /transcripts for skill analytics.
- Add a /data bind mount for the SQLite store and pass ANTHROPIC_API_KEY
  (from .env) for real token counting.
